The veg is cooked already. I then heat oil in pan & fry the onions, tomatoes, etc & mix the veg through. A touch of cream or milk; a few curry leaves . . . done!

It makes it much easier to fry them to the right point. Also, I microwave the cauliflower for a few minutes for the same reason.
