I use a slightly different group of vegetables to yours, but when not able to get to the Thai store for fresh, i have used bamboo shoots ( wide slices), Bok Choi and red pepper chunks. My normal veg mix is Thai pea aubergines, bamboo shoots, Thai peppercorns on the branch. I also throw in a few prawns right at the end!
