I am not sure about the nitrate level of cooked vegetables but agreed that it should be consumed as soon as possible.

But I understand that it is not healthy to keep vegetable overnight (nitrate effect); correct me if I am wrong. Maybe we can finish up all vegetables in the soup and add in fresh ones the next day when heating the soup. Just a thought. Am concerned as I do cooked mixed chap chye which gets better overnight but…..

Hi Star,
You can keep the soup for a few days in the refrigerator. If you freeze it, it can be kept for a longer period. I just used frozen lotus to make this soup a few days ago since the fresh lotus is not available, and it turned out fine.
