Now that my kids are gone, and when my husband is traveling, I need some quick and easy meals for one. I “invented” tomato eggs (mix one egg and one Roma tomato in the bowl, and then cook them with a little oil in a non stick pan) and have been eating it several times a month.

Common sense tells me that I did not really invent this, so I decided to do a search for some variations. I am excited to try your recipe very soon!
