I have not tried using cornstarch without gelatin, so I really cannot provide an answer :). I try, I would likely use 30g of cornstarch to replace the gelatin in this recipe,
However, if it works, the texture will be very different.

I use fresh milk. You can omit the cream and use all milk for sure.

Hi Janice,
The best way is to increase each of the ingredients in the recipe proportionately.

Thank you.

Hi Selina,
It can be many reasons but mostly is cost by the amount of gelatin. I suggest the followings:
1. Measure the amount of gelatin accurately. Since the amount is small, use a digital scale with accuracy to one gram.
2. The strength of the gelatin varies. The recipe is based on gelatin with bloom value of 200. Check the information on the packaging of the gelatin. You may need to adjust the amount.
The section “The optimum amount of gelatin” in the article will give you more information about this.

I hope this helps.
