Served it with green leaf,mint and coriander salad with plenty of freshly squeezed lime. Also froze some uncooked, in the marinade so all ready for next time!

The chicken thigh I use is about 250g (1/2 pound) each. The weight is base on after removing the bone by the chicken vendor. Thanks.
